Molise PR client, Gene & Georgetti (located at 500 N. Franklin St.) is gearing up to celebrate their 70th anniversary–and boy, are they on a hot streak!  While promoting the three nights of 1940′s-style “throwback” dinners (being held July 14-16), the G&G team has been making the media rounds, touting their celebration in which patrons will be offered 4 courses plus 2 cocktails, all off the special 1940′s-inspired prix fix menu, for just $15.25 per person.  Yes, you read that correctly, a meal consisting of appetizer, salad, entree, dessert and two drinks of your choice (think classic cocktails like Rob Roys, Manhattans, and Sidecars) for less than $20!  And to make the offer even sweeter, G&G will donate partial proceeds from the three nights to local charities Common Threads, Standing Tall, and St. Vincent DePaul Center.

Recently, owner Tony Durpetti has been featured on WGN Midday News (with his daughter Michelle) cooking up one of G&G’s signature dishes, Chicken A La Joe.  Last week, Crain’s Chicago Business did a special feature on the restaurant and its storied history, in which the crew quizzed Durpetti on the various business deals that had occurred within the walls of the restaurant, including the historic CME/CBOT merger in 2007.  Coming up: FOX’s “Classic Chicago” segment with Corey McPherrin (set to air this week) in which historian Tim Samuelson will chat about the history of the River North neighborhood and how it has changed in the last 70 years in relation to the restaurant.

Molise PR is heading up the media relations efforts for a spectacular upcoming event, the Grand Opening celebration and ribbon cutting ceremony for the swanky new Rolls-Royce Motor Cars Gold Coast (834 N. Ontario) recently launched a new, more casual bar menu to cater to the post-work and Magnificent Mile shopping crowd, and it sure is lookin’ good!  The menu–which can be found here--consists of yummy bar bites, appetizers, salads, and sandwiches, ready to satiate you and your coworkers’ after-work hunger pangs.  And since an outing with colleagues is never complete without liquid libations, Lawry’s full bar is available, including their famed Meat & Potatoes Martini (Chopin Vodka served up with a prime rib and horseradish-stuffed olive), beer flights featuring local brews and Lawry’s own Brown Gown Ale, and specially selected wines.

Yesterday, March 7th, Molise PR accompanied Chef Victor Newgren of Lawry’s the Prime Rib while he cooked for hungry guests at the Flower & Garden Show at Navy Pier.  Over 250 show-goers took a break from perusing the petunias and browsing the bulbs to watch Chef Victor whip up a St. Patrick’s Day feast of corned beef and cabbage (recipe below) and then a yummy breakfast of corned beef hash, brioche toast and a sunny-side-up egg.

Volunteers handed out samples, while Chef kept the crowd enraptured with stories from his days as an up-and-coming culinary student.  One especially funny anecdote included a corned beef-craving Sen. Ted Kennedy, to whom Chef Newgren accidentally denied his hash only to find out later who the mystery man was.  Long story short, in lieu of the corned beef hash, he made him an omelet which, he said, Mr. Kennedy loved so much he declared it the “best he had ever had” and indulged in a second helping.

Corned Beef and Cabbage

Ingredients:

5 lb.             Vienna Corned Beef Brisket

2 gal.            Water

1 gal.            Beef Stock

1 ea.            Cinnamon Stick

1 T            Yellow Mustard Seed

1 tsp.            Black Peppercorns (whole)

2 ea.            Cloves

1 T            Whole Allspice

3 ea.            Juniper Berry

2 ea.            Bay Leaves (fresh or dried)

1 ea.            Spanish Onion (cut in half)

3 ea.            Celery Stalks (cut in half)

2 ea.            Large Carrots (cut in half)

3 ea.            Whole Green Cabbage Heads (cut into quarters)

1 lb.             Baby Carrots

1 lb.             Small Red Skin Potatoes

Preparation:

  • Place all spices in cheesecloth, tie into a bundle with a string
  • In large, oversized pot: Add water, beef stock, brisket, spice bundle, Spanish onion, celery and the 2 cut up, large  carrots
  • Bring to a boil, reduce heat and simmer for 1 ½ hours
  • Add the cabbage and cook an additional 30 minutes
  • Add the red skin potatoes and cook an additional 45 minutes
  • Add the baby carrots and cook an additional 15 minutes
  • You will know it is done, when you can easily pierce the brisket with a meat fork and it is tender

Horseradish Cream Sauce

Ingredients:

2 Qt.            Half and Half

1 ea.            Large Spanish Onion (diced)

5 ea.            Sprigs of Fresh Thyme

1 ea.            Bay Leaf (dried or fresh)

½ tsp.            Black Peppercorns (whole)

4 oz.            White Wine

1 T            Butter

1 ea.            Fresh Horseradish Root (finely grated)

Roux Ingredients:

(used as a thickening agent)

3 oz.            Butter

3 oz.            All Purpose Flour

Sauce Preparation:

  • In large saucepan, melt 1 T butter over low heat, and sauté onions until translucent
  • Add herbs and white wine, reduce until most liquid has evaporated
  • Add half and half, simmer over low heat for 1 hour

Making Roux:

  • In a small saute pan, melt the 3 oz. of butter over a low heat
  • Stir in flour and continue stirring until the roux thickens, is beginning to turn lightly brown, and has a slightly nutty taste
  • Into a new pot, strain the reduced half and half  mixture, through a sieve
  • Bring to a boil and immediately add the roux, slowly, stirring continuously
  • Cook on low, until the liquid has thickened
  • Take off heat
  • Add grated horseradish, to taste

To Serve:

    1. Slice meat, against the grain
    2. On each plate, place some drained vegetables in the center
    3. Lay 4-5 slices of corned beef brisket over the vegetables
    4. Place a cabbage quarter next to the beef along with some red skin potatoes
    5. Drizzle horseradish sauce over the meat and around the plate
    6. ENJOY!

Partygoers sipped sponsored Moet Champagne as they listened to speeches from McClanathan and The James Hotel Head Concierge, Bill Marcels.  Marcels is currently up for possible inclusion in the exclusive professional society of the Les Clefs.  Both talked about the need for city-wide participation and cooperation among those in the travel and hospitality industries to make the Congress (scheduled for September 2013) a success.

Last Thursday, February 11th, over 7,000 guests dressed to the nines gathered at McCormick Place for the 20th annual “First Look for Charity” Gala.  Molise PR client, Toque + Bottle Advisory (masterminds in food and beverage consulting and execution) kept them all fed and well lubricated with beer gardens, chef stations and chocolate fountains during the exclusive event on the eve of the Chicago Auto Show’s opening day.

Benjamin Smock, founder of Toque + Bottle, modeled the culinary stations after 1908′s historic “Greatest Auto Race on Earth” which challenged early automobile enthusiasts to take their cars around the earth from New York to Paris.  The event featured culinary and cocktail stations based on the race’s international checkpoints, as the show floor traced a path from the Big Apple to the City of Lights. Guests sampled food and drink offerings from the race’s first checkpoint, Chicago, plus San Francisco, Yokohama, Moscow, Berlin and more, all while viewing over 1,000 new vehicles- dozens on display for the first time anywhere.

Beverage offerings included a Belvedere interactive cocktail experience; a Spaten Biergarten with café seating; wines from Folie à Deux, and butler passed Chandon bubbly.

Delectable delights were provided by Catered by Design, David Burke Primehouse, and Wildfire, while dessert station sponsors included aja, The Signature Room, Butter Bella, Fogo de Chao, Texas de Brazil, and more.

In all, $1.9 million dollars was raised by the event that will go to support eighteen local charities including Autism Speaks, Catholic Charities, Misericordia Foundation, and The Boys and Girls Clubs of Chicagoland.

Clark Street) this Valentines Day weekend.  The River North bar will be throwing its inaugural “Cupid is Stupid” anti-Valentine’s Day party on Monday, February 14 and will feature specials including “Black Heart Shots” (Goldschlager and Jagermeister) and “Black Mimosas” (champagne topped with Guinness) for $4 throughout the weekend (Friday, Feb 11- Monday, Feb 14).

Fedora Lounge LogoNew Molise PR client, Fedora Lounge (712 N. Clark Street) will go hot for tots when they honor National Tater Tot Day (Feb 2) with a weeklong celebration of the much-beloved potato side dish beginning Monday, January 31 and running through Friday, February 4.

Although normally delegated to the side, Fedora will put the tots center stage, as they will feature a new appetizer each day starring tater tots.  The inventive and delicious menu will kick off with the River North bar’s famous Tachos (available 365 days of the year), a fun dish that they describe as “Nachos, but hold the chips, sub tots.”

Schedule for the week (All dishes are $7):

·      Monday, Janurary 31- Tachos: Everything you love about nachos but with tots instead of chips.

·      Tuesday, February 1- Buffa-Tots: Tots tossed in Fedora’s hot wing sauce, served with shredded chicken, sprinkled with blue cheese crumbles and scallions.

·      Wednesday, February 2- Tot-za: Pizza margherita with a twist, featuring tots as the crust and Fedora’s homemade vodka tomato sauce.

·      Thursday, February 3- Arti-Tot Skewers: Tots add a new dimension to Fedora’s artichoke fritters and homemade moji sausage all skewered and served with red pepper remoulade dipping sauce.

·      Friday, February 4- “People’s Choice Tots”: Fedora Lounge will open the discussion up to Facebook friends and regular customers who can submit their favorite “tot-cipe” to be featured on Friday night.

Also available all week for those who can’t get their fill of the fried tubers, Fedora is offering “Tots for Dessert,” with tater tots tossed with cinnamon and sugar, or “Tot Fondue,” extra crispy tots served with chocolate and marshmallow dips.  Both desserts are $7.
